Introduction

Very flavorful and colorful veggie side dish. Wonderful accompaniment with chicken or fish. Very flavorful and colorful veggie side dish. Wonderful accompaniment with chicken or fish.

Ingredients

    2 medium carrots, peeled
    2 large zucchini
    2 large yellow squash
    1 tbsp Extra Virgin Olive Oil
    1 clove garlic, minced
    1/4 cup low-sodium chicken broth
    1 tbsp parsley
    1 tsp basil
    1/4 cup freshly grated Parmesan
    Salt and pepper to taste

Directions

Slice carrots, zucchini and squash lengthwise into thin ribbons.

Heat olive oil over medium heat. Add garlic and cook about 1 minute. Add the vegetables and the broth and cook about 3 minutes. Add parsley and basil and toss to coat. Remove to a serving dish. Top with grated Parmesan. Add salt and pepper if desired.
