Ingredients

    Potatoes
    Chicken breast, cooked & diced
    Corn
    Nonfat milk
    Brummel & Brown buttery spread w/yogurt
    Flour
    Half and Half
    Olive oil
    3 cloves garlic
    Leeks
    Turkey bacon
    bay leaves
    sage
    poultry seasoning
    salt & pepper
    smoky paprika
    cumin
    fresh chives, snipped
    fat free sour cream
    reduced fat cheese, shredded

Directions

Heat 2 tsp olive oil & butter spread in large soup pot. Clean & dice leeks, add to oil and cook until almost soft. Dice potatoes. Add 4 cups chicken broth & bring to simmer. Add potatoes, corn, chicken and all spices. Let simmer for 15 minutes. In small bowl (I use magic bullet for this) blend milk, 1/2 & 1/2 & flour. Pour mixture into soup pot. Add cheese. Let simmer for 5 minutes or so. If soup is thicker than you like, add more broth to thin out. Top with a little fat free sour cream, snipped chives & crumbled turkey bacon.
