Ingredients

    500 g ital. penne
    100 g sun-dried tomatos
    100 g black olives, coreless
    2 garlic cloves (i ususally take more, though)
    4 tablesp. tomatopaste
    4 tablesp. balsamic vinegar
    1 tablesp. olive oil (to pour over the sundried tomatos)
    2 tablesp. olive oil (for the sauce)
    3 tablesp. water
    black pepper, freshly ground
    250 g feta cheese (i take a light product. NOT in oil!)
    some fresh sage leaves

Directions

Prepare the penne (make them al dente).
Chop olives, the smaller the pieces the better. Pour one tablespoon of olive oil over the chopped sundried tomatos (they should absorb the oil a bit).
Mince or crush the garlic, then mix it with the balsamic vinegar and the tomato paste. Add 3 tablespoons water and the 2 tablespoons olive oil. Stir well. Season with salt and pepper.
Mix the pasta, the (crumbled) feta cheese and the sauce, cover it and wait for at least 2 hours.
Then add the sundried tomatos (incl. the olive oil) and the olives.
Roast the sage leaves in a pan without oil and decorate the salad!
