    120 g chopped leek,
    400g chopped savoy or chinese cabbage
    1 medium onion chopped
    200g smoked bacon diced
    400 g rice (for risotto:carnaroli or arborio best)
    3 tbsp virgin olive oil
    3 tpsp grated parmesan
    1-1.5 litres of stock. (i use veggie fat free and that's what's in the nutrition counter).


soften the leeks and onions with the bacon in the olive oil over a low heat in a fairly deep pot.
add the cabbage and cook down (takes about ten minutes)
add the rice and stir through for a minute or so. then add the stock ladle by ladle stirring through as it absorbs.
when cooked (depends on the rice but about 20 minutes and no way to know without tasting) season to taste. mix the parmesan through to serve.
