Introduction

This is just like scrambled eggs, but with tofu. It's very simple to make, and should take about 15 mins all together. Scrambled tofu is great with any type of breakfast food, such as pancakes and sausages.

(Hint: If you want a healthy lunch, this is great. Just use half or a 1/4 of the block of tofu.)

Number of Servings: 4

Ingredients

    1 block of firm tofu
    A handful of cherry tomatoes, sliced in half
    1 small to medium onion
    Spike salt free seasoning
    Basil (dried or fresh)
    Oregano
    Parsley
    Garlic salt

Directions

Get out a saucepan and lightly drizzle olive oil in it. Turn the heat on medium while you dice a small or medium sized onion. After the pan is hot, put the onion in it and stir until golden in color. Then drain and crumble all of your tofu into the onions. Let cook for a few minutes (basically until it's warm). Add the seasonings (all to taste) and stir. Slice the cherry tomatoes in half and add them. Stir and let sit on low heat until the tomatoes are warm. Serve right away, with ketchup or whatever you normally put on scrambles eggs.
