Very delish pasta skillet dinner loaded with great vitamins. Very delish pasta skillet dinner loaded with great vitamins.
Number of Servings: 8


    1 tbs Extra Virgin Olive Oil
    4 cloves garlic minced
    12 oz fresh spinach
    28 oz can crushed tomatoes (low sodium)
    15 oz can white or cannellini beans, rinsed and drained
    1/2 cup halved kalamata olives
    12 oz package whole wheat penne pasta
    bay leaf, 1 tsp thyme, salt and pepper


Sautee garlic in olive oil over med heat to warm; add spinach and simmer to wilt.
Meanwhile cook pasta according to directions.
Add beans, tomatoes, olives and seasonings to spinach; simmer 10 mins.
Drain pasta; toss into sauce mixture and heat through.
