    3 oz. Halibut (or other fish)
    1 Whole Wheat Tortilla
    1 Lime (juice of)
    1Tbsp Olive Oil
    2 tsp Chili Powder
    1 clove Garlic
    1 Tbsp Cilanto (fresh)
    1/4 C shredded Cabbage
    1/4 C Sweet Red Peppers
    1/4 C Zucchini (chopped in 1/2" chunks)
    1/4 C Chopped Tomato
    2 Tbsp Salsa
    1 Tbsp Reduced Fat Sour Cream


Chop peppers and zucchini (can also add/substitute other roasting vegetables - be mindful of calories), shred cabbage, and chop tomatoes and cilantro
Preheat oven to 350?
Marinade: Whisk together juice of 3/4 lime with olive oil, chili powder, garlic, & dash of salt.
Pour 1/2 of marinade over fish, the other 1/2 over roasting veggies. Cover fish and place in refrigerator. Pour veggies in caserole (or foil) and place in preheated oven for 15 minutes. Remove veggies place fish on top, return to oven and cook 8-10 minutes.
Warm tortilla. Flake fish and place on tortilla. Top with roasted veggies, shredded cabbage, tomatoes, salsa, sour cream, cilantro, and remaining lime juice. ENJOY!
