    1 - 19 oz can black beans, rinsed & drained
    1/4 cup non-fat mayo
    2 Tbsp vinegar
    1 tsp chilli powder
    4 whole wheat tortillas
    1/2 cup shredded low-fat cheese
    1/2 cup chopped red pepper
    1/4 cup chopped onion


1. In a medium bowl, mash the beans with a fork.
2. Add the mayo, vinegar, & chilli powder and stir until well blended.
3. Spoon 1/4 of the recipeon half of each tortilla.
4. Sprikle 1/4 of the cheese, pepper, & onion over top of the bean mixture.
5. Fold plain side of the tortilla over the bean mixture.
6. Bake in 500 F oven until crisp ans golden, about 7 minutes.
7. Serve with salsa.
