    1 lb. ground turkey
    1 medium onion, finely chopped
    1 28-oz. can diced tomatoes (plus liquid)
    1 6-oz. can tomato paste
    1 4-oz. can mushrooms, drained
    1 tsp. garlic powder
    2 tsp. Italian seasoning
    2 large zucchinis, sliced lengthwise about 1/4" thick
    6 oz. Part-skim Mozzarella cheese, shredded
    8 oz. Part-skim Ricotta cheese
    2 oz. Parmesan cheese, grated


Brown ground turkey with onion, drain. Add tomatoes and liquid, tomato paste, mushrooms, garlic powder, and Italian seasoning. Cover and simmer 1 hour. Steam or microwave zucchini slices until barely fork-tender. In a 9x13-inch Pam-sprayed pan, place the following ingredients in layers: 1/2 meat sauce, zucchini slices, 1/2 cheeses, 1/2 meat sauce, and 1/2 cheeses. Cover with foil and bake at 350 degrees for 1 1/2 hrs. Remove cover for the last 10 minutes of baking.
