Ingredients

    1 lb. Chicken breast cut in serving pieces
    1 small butternut squash, cut in cubes
    1 medium onion chopped
    ½ tsp. minced fresh ginger
    1 tsp. garlic powder
    1 tsp. chicken granules or 1 chicken bullion
    1/3 cup cooking wine Marsala
    Salt and pepper to taste
    Paprika or red pepper to taste (optional)

Directions

Sprinkle chicken with salt and pepper. Set aside.
In a large skillet with a lid sauté onion.
Add chicken to skillet, and brown both sides.
Add squash and spices, except cooking wine.
Add 1/3 cup of water and cover.
Simmer for about 20 minutes or until squash is tender.
Flip chicken over, add cooking wine and cook for another 5 minutes uncover.
Taste and adjust salt and pepper.
Just before serving sprinkle either paprika or red pepper if you like it hot.
