    1 potato
    1 tomato
    1 jalapeno
    1/3 c. green onions
    1 teaspoon olive oil
    2 eggs
    5 tortillas


Cut potato into small cubes. Heat olive oil in skillet and add potato cubes. Add about 1/4 c water and cover. Stir occasionally and let cook for about 10 mins. Uncover once liquid evaporates and let potatoes brown. Add chopped up veggies and cook for a few minutes. Add the 2 eggs and stir. Cook until egg is to desired doneness. I got about 5 tacos worth.
