Introduction

Original recipe adds 1 cup shredded carrots-I omit this in mine so my son will eat it. Original recipe adds 1 cup shredded carrots-I omit this in mine so my son will eat it.

Ingredients

    1 package Betty Crocker low fat scalloped potatoes
    1/8 teaspoon poultry seasoning
    1-3/4 cups boiling water
    1 can condensed cream of chicken soup 98% fat free
    2 cups cubed cooked chicken
    1/2 cup chopped celery
    1/4 cup finely chopped onion

Directions

Place the contents of potato sauce mix in a large bowl; set potatoes aside. Sprinke sauce mix with seasoning. Whisk in the water and soup. Stir in the chicken, celery, onion and potatoes. Transfer to a greased 2 qt baking dish. Bake, uncovered, at 400 degrees for 45 minutes or until vegetables are tender. 4 servings
