    1 lb flank steak
    1 large onion
    8 oz crimini mushrooms, sliced
    3 Tbsp Wondra flour
    2 cups low sodium beef broth
    3/4 tsp thyme, dried
    1/4 tsp black pepper
    2 Tbsp brandy or cognac
    1/2 cup lowfat sour cream
    1 Tbsp red wine vinegar


Spray pan and brown flank steak, 5 minutes per side. Set aside and let rest for 5 minutes. Spray pan again and add onion, thyme pepper and mushrooms. Saute for 10 minutes until tender. Sprinkle with flour and stir until veggies are coated. Slowly stir in broth. Add brandy and vinegar and slowly bring to a boil. Simmer until thickened, about 3 minutes. Slice meat into 4 strips and then slice strips while sauce is thickening. Add meat, juices and sour cream. Simmer another minute or two until heated through.
