Chicken, stuffing, and water chestnuts make this so great! Chicken, stuffing, and water chestnuts make this so great!
Number of Servings: 6


    2 cups cooked chicken, cut into cubes
    1/4 cup chicken broth
    1 can sliced water chestnuts, drained
    2 stalks celery, chopped
    1/4 light mayo
    2 tbsp. chopped onion
    1/2 stick of butter, melted
    1 cup stuffing mix


Preheat oven to 375 degrees
While chicken is cooking, chop onion and celery. Saute in 2 tbsp. butter over low heat until tender, but not brown. Remove from heat and add the mayo and chicken broth. Add water chestnuts and mix to blend. Put cooked chicken pieces into bottom of casserole dish. Pour chestnut mixture over top. In a small bowl mix melted butter and stuffing. Sprinkle stuffing on top of chicken and bake
makes about 6 servings
