Introduction

If substituting fresh or frozen blueberries, cut milk back to 1/2 cup. You can use 1% or skim milk instead of 2% if desired. You can also substitute 1 cup of sugar for the agave nectar. Ingredients

    1 cup regular or thick cut rolled oats
    1 cup freeze dried blueberries
    1 cup 2% milk
    1/2 cup unsweetened applesauce
    1 egg
    2/3 cup agave nectar
    1 Tbsp lemon juice
    2 cups whole grain flour
    1-1/2 Tbsp baking powder
    3/4 tsp salt

Directions

Preheat the oven to 375 degrees. Spray muffin pan with non-stick spray. Soak blueberries and oats in milk. In a large bowl, mix together the remaining ingredients. Pour in the blueberries, oats, and milk and stir until just combined. Fill muffin cups 3/4 full. Bake 20-25 minutes or until done. Makes 13 servings.
