Introduction

This is a vegetarian version of the classic Caldo Verde. This is a vegetarian version of the classic Caldo Verde.
Number of Servings: 10

Ingredients

    2 Tbsp. Olive Oil
    1 cup carrots, chopped
    1 cup onion, chopped
    5 cloves of garlic, mashed or finely minced
    1 tsp Smoked Paprika or grind chipotle dry peper (optional)
    1 1/2 lb. potatoes, scrubbed, skin on, diced
    1 bay leaf
    1/2 tsp chili pepper flakes
    8-10 cups water or vegetable stock
    2 cups cooked white beans
    4 cups Kale, shredded
    1 tbsp. Braggs or Soy sauce
    1/2 cup cilantro
    1/4 cup parsley
    season with salt and pepper

Directions

Heat a large soup pot, add the olive oil, followed by the vegetables, carrots, onions, garlic and smoked paprika or chipotle pepper. Saute for 3-5 minutes stirring occasionally so nothing sticks or burns.

Add potatoes, bay leaf,hot pepper and stock. Bring to a boil, then turn down and simmer for about 30-45 minutes, until potatoes are done. Add remainder of the ingredients, kale, cilantro, parsley, Braggs or soy sauce and simmer another 15 minutes. Season with salt and pepper.

    So, so good! Cooked this in my slow cooker, used small red kidney beans instead of white and topped with croutons. - 7/14/11
