    2 courgettes, chopped into large pieces
    2 onions, cut into 8 pieces
    6 cloves of garlic, peeled and cut in half
    1 tbsp extra virgin olive oil


Chop onions, garlic and courgette. Drizzle olive oil and mix around so vegetables are coated. Add mixed herbs, salt and pepper and roast at 190oC for about 15-20 minutes.
