    Mrs. Smith's Frozen Pie Crust, 1 serving
    Egg, fresh, 3 large
    *Egg white, 4 serving
    Spinach, fresh, 2 cup
    Scallions, raw, 1 large
    Sour Cream, 2 tbsp
    Olivio, Olivio Buttery Spread, 5 sprays, 1 serving


Preheat oven to 425
Poke holes in crust and bake for 5 minutes then remove from oven and set aside.
Reduce oven heat to 350.
Chop up spinach and scallion.
Spray pan with cooking spray.
Cook spinach and scallion until spinach is wilted. Add salt and pepper to taste.
While spinach and scallions cook, beat together eggs, egg whites, sour cream and cheese.
Add spinach and scallions to egg mixture.
Pour mixture into pie shell.
Put shell in oven and bake for 30 minutes.
Let cool if desired then serve.
