Introduction

Ingredients

    Whole Wheat Flour, 1 cup
    Baking Powder, 1.5 tsp
    Salt, .5 tsp
    Brown Sugar, 3 tsp
    Regular Beer, 4 fl oz
    Butter, unsalted, melted 1 tbsp

Directions

1. Preheat oven to 350 degrees.
2. In a mixing bowl, sift whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stir until a stiff batter is formed. It may be necessary to mix dough with your hands.
3. Distribute into a greased muffin pan.
4. Baste melted butter over mixture (and any desired spices, i used an italian mix).
5. Bake 20-30 minutes, done when toothpick inserted comes out clean. Cool for 10 minutes in pan and remove to wire rack.

    Used blackstrap molassess instead of sugar with a bit of dark coffee to give this a richer taste. Had to use more flour, but it turned out yeasty and delicious (especially with a sharp cheese!) - 3/20/11
