    3 egg whites
    1 whole egg
    .25 cup yogurt cheese
    .25 tsp sea salt
    freshly ground white pepper
    cooking spray


serves 1
1. Crack 3 eggs over a medium bowl, separating whites into the bowl and discarding the yolks.
2. Crack one whole egg into the bowl. Add remaining ingredients.
3. Coat skillet with cooking spray. Heat on medium.
4. Pour egg mixture into skillet and reduce heat to low. Cook eggs, stirring constantly with a spatula. This will take 2 or 3 minutes. Don't let the eggs overcook. When the eggs are just dry they are ready to serve.
