A gluten free, egg free, soy free high fiber muffin. A gluten free, egg free, soy free high fiber muffin.
Number of Servings: 12


    3 C Oat flour
    2/3 C sugar
    2 tsp. baking powder
    1 tsp. salt
    1/2 tsp baking soda
    1 Tbsp. Flax seed meal
    1/2 C oil
    3/4 C of fresh orange juice and zest of 1 orange
    1 1/2 tsp. apple cider vinegar
    1 C. fresh cranberries


Preheat oven to 350 degrees
Mix Flour, sugar, baking powder, salt, baking soda,and flax meal in a medium sized bowl.Add zest, oil, juice, and vinegar to the dry mix and stir together well.
Stir in cranberries.
Bake at 350 degrees for 20 - 25 minutes, or until toothpick stuck into the middle comes out clean.
Enjoy immediately or let cool and freeze for later.
