    1 Low Carb Tortilla (white, the whole wheat doesn't crispy right)
    1/4 tsp olive oil or just a spray
    2 oz of Shredded Chicken
    1 wedge of light Laughing Cow Cheese
    2 tbsp of Black Bean & Corn Salsa
    1 serving of Red Bean hummus (recipe for hummus is here


Preheat oven to 350
drizzle the olive oil on the back of the tortilla. Spread evenly and blot off excess with paper towel. Place oil side down on pizza pan.
Spread hummus on half of the tortilla
top hummus with chicken and cut up laughing cow cheese.
Bake for 10 minutes, watching to make sure it doesn't burn
Once bottom is nicely brown, fold the tortilla in half to make quesadilla.
Cut into fours and serve with Black Bean and Corn Salsa for dipping.
