Not my grandmas irish soda bread but even better.. Not my grandmas irish soda bread but even better..
Number of Servings: 12


    2 cups all purpose flour
    2 cups whole wheat flour
    1/3 cup brown sugar
    1 tbs baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp dried basil
    1/2 tsp dried thyme
    1/2 tsp dried oregano
    1 1/2 cups low fat buttermilk
    2 large eggs
    2 tbs olive oil

    1/2 cup good black olives, chopped
    1 head garlic, roasted


Combine wet ingredients, except olives and garlic.

Combine dry ingredients, except olives and garlic

Combine wet ingredients with dry ingredients... and put out on a board and knead til c ombined.

Add olives, if you're using and add roasted garlic. knead til combined.

Divide in half...

Shape into 2 round loaves on a cookie tin or cake tin

Slice an X about 1/2 " deep in the center of the loaf and bake at 375 for about 40 minutes til brown and crusty.
