Introduction

Ingredients

    1 cup whole wheat flour
    1-1/3 cup all purpose flour
    1 cup sugar
    1/4 cup flax seed, milled
    1-1/2 tsp. baking powder
    1 tsp. baking soda
    1-2/3 cup ripe banana, mashed (about 3)
    3 eggs, beaten
    2/3 cup milk (2% lowfat)
    2/3 cup peaches, pureed
    1/2 cup walnuts, chopped

Directions

Preheat oven to 350 degrees. Line 18 muffin tins with paper liners, or spray with cooking spray.
In a large bowl, mix together flours, flax, sugar, baking powder and soda. Be certain baking powder and soda are well distributed.
Mash bananas in a food processor, or in a separate bowl by hand. Puree peaches in food processor, or thoroughly mash by hand. Add fruits, eggs and milk to dry ingredients and mix.
Stir in chopped nuts.
Pour batter evenly into prepared muffin tins. Bake until toothpick inserted in center comes out clean, about 22-25 minutes.
Serving size is one muffin. Makes 18 muffins.

    This was an excellent recipe! My kids and I completely enjoyed. Just make sure you don't use paper cups to line the pans... they stuck. The ones with oout liner or with foil liner came out much more moist :) - 6/3/10

    These muffins were tasty. I substituted Xylitol for the sugar but wasn't able to adjust the nutrition page but it should be less carbs. - 8/18/09
