    2 pounds Chicken Breast, No Skin, No Bone, R-t-c
    1/3 cup Chicken Broth
    1/3 cup Orange Juice
    2/3 cup Mushroom Soup
    2/3 cup Fresh Mushrooms -- sliced
    2/3 whole Bell Pepper -- sliced thin
    2/3 whole Red Onion
    1 1/3 tablespoons All-purpose Flour
    2/3 tablespoon Tarragon
    2/3 teaspoon Salt
    1/3 teaspoon Pepper
    2 teaspoons Oil
    1/3 teaspoon Zest of Orange Rind


Combine salt, pepper and herbs in flour. Dredge the chicken halves in the flour to coat. Saute' in a little olive oil till browned.
Set aside in small roasting pan

IN a medium bowl combine mushroom soup, orange juice and chicken stock - wisk to blend
Pour over browned chicken breast in a roasting pan - roast 2 hours at 325 degree F. with lid. Roast 1/2 hour longer, with out lid
Combine bell pepper, mushrooms and red onion, saute till the onion is limp, set as side and add to chicken.
Stir in sliced orange [eith out rind] before serving.

This recipe is very addaptable to microwave cooking. Once you have the casserole assembled, Microwave on 50% for 1 hour.
