Makes two delicious loaves. Makes two delicious loaves.

    8 Cups (1040 grams) Whole Spelt Flour
    3.5 Cups Water
    2 Tbsp Sunflower Oil
    1 Tbsp Salt
    21 grams fresh yeast OR 1 Tbsp Active Dry Yeast
    3 Tbsp Brown Sugar


If using fresh yeast, mix it with the sugar and water and let stand until it bubbles. Then you know it's alive. Yay.

Mix everything else together. Add bubbling yeast. Mix well. It will be very wet and gooey.

Cover bowl and let stand until doubled in height. (I put the bowl in the oven on a rack, and put a bowl of boiling water on the floor of the oven. Dough rises in 1 hour.)

Preheat oven to 350 F or 180 C. Pour dough into two loaf pans. Bake for about 45 minutes.
