Number of Servings: 16


    1 stick softened margarine
    1 Cup sifted flour
    1/4 Cup 4x confectioner's sugar
    2 well beaten eggs
    1 Cup granulated sugar
    3 Tablespoons fresh lemon juice
    2 Tablespoons sifted flour
    1/2 teaspoon baking powder


Preheat oven to 350 degrees, coat bottom and sides of 8-inch square pan with cooking spray. Crust: In electric mixer, beat the margarine for a minute or two. Add the powdered sugar and flour. With your fingertips, press the crust evenly into the greased pan. Bake 10-15 minutes until lightly browned. Remove from oven and cool for 15 minutes (while you wash the electric mixer for the filling). Then, put the crust into the fridge for 10 minutes while you prepare the filling.
Filling: Beat the eggs in the electric mixer for 2-3 minutes. Add the sugar, lemon juice, flour, and baking powder. Beat another 2-3 minutes until it is all well combined and frothy, scraping down the sides if needed. Pour over crust and bake 20-25 minutes until brown (do not overcook). When completely cooled, sprinkle with powdered sugar (a small strainer/sifter works well) until covered. Cut into 16 squares and enjoy! Store covered up to 4-5 days.
