Ingredients

    1 box any flavor couscous, prepared as directed (different flavors will alter calories and other nutritional value)
    1 pint of cherry tomatoes
    1 tbsp olive oil
    1 tsp salt
    1 tsp pepper

Directions

Preheat the oven to 450 degrees. Combine the tomatoes, oil, salt and pepper. Place on a baking sheet. Roast for 10 - 15 minutes, or until tomatoes burst and shrivel a bit.
