Introduction

I have not tried it, but I think you could probably use the olive oil mayonaise that is out on the market now.

Number of Servings: 4

Ingredients

    1/2 cup dried cranberries
    3 tbsp. extra virgin olive oil
    1 tbsp. fresh lime juice
    1 cup fat free mayonnaise
    1/4 tsp. curry powder
    4 boneless, skinless chicken breast
    1/3 cup almonds, sliced and toasted
    3/4 cup celery, chopped
    1/4 cup cilantro, chopped

Directions

1. Soak cranberries in warm water for 10 minutes. Drain well and chop.
2. Whisk together ooilve oil, lime juice, mayonnaise and curry powder. Set aside.
3. Grill chicken, cool and slice
4. Mix together cranberries, chicken, dressing and remaining ingredients.
5. Salt and pepper to taste.

Tip: Serve with pita pocket bread, bun or French bread (not included in nutritional value).
