    1 lb. extra lean ground beef (96% lean)
    28 oz. can crushed tomatoes
    6 oz. can tomato paste
    1 c. lowfat ricotta cheese
    7-8 whole wheat lasagna noodles
    1 c. shredded 2% sharp cheddar cheese
    1 1/2 c. shredded Italian blend cheese
    1 block (8 oz.) Neufchatel cheese (optional)


-Cook noodles and set aside.
-Brown meat, seasoning with salt, pepper and Italian seasoning. Add crushed tomatoes and tomato paste to the meat and let simmer 20 minutes.
-Grease 9X13 pan and heat oven to 350 degrees.
-Blend the ricotta and cottage cheeses in a food processor until smooth.
-Layer 1/2 the noodles, then 1/2 the cottage cheese/ricotta blend, sprinkle 1/2 c. each of both the shredded cheeses and then top with 1/2 the meat sauce. Repeat the layers.
-Cut the neufchatel cheese into 12 pieces and
lay on top to delinate servings.
-Top off with the remaining 1/2 cup of Italian blend cheese and cook for 25-30 minutes.
-Let rest 15 minutes after removing from the oven before serving.
