    1 c Eggplant
    .5 c Green Peppers
    .5 c Onion
    .5 c Mushrooms
    .5 c Firm Tofu
    2 c marinara sauce

    a few chopped baby carrots
    one garlic clove
    a whole spaghetti squash, steamed in oven


Put squash in oven and cook.

Combine all other veggies in frying pan. Cook with olive oil spray. Add marinara sauce.

EAT!! Makes about 4 servings.
