Introduction
If you're looking for a meal with very low calories and lots of yummy veggies then this is definitely one to try!! You can eat tons and not feel guilty! It would be even better with some type of lean cuts of meat as well...chicken, beef or pork. Ingredients

2 (6 oz.) pkgs. soba noodles
4 T olive oil
2 carrots, sliced diagonally
1 crown of broccoli, florets removed
1 medium onion, sliced
3 stalks celery, sliced diagonally
8 oz can sliced water chestnuts
10 mushrooms, sliced
1/2 napa cabbage, 1/4-inch slice
4 scallions, 1-inch pieces
2 cups cold water
2 T lite soy sauce
2 T corn starch
2 tsp bouillon of choice (granules)
1 1/2 tsp. hot chili sesame oil
salt & pepper, to taste
Directions
1.Cook soba noodles in boiling water for 3-5 minutes (do not overcook). Rinse under cold water and drain well. Pour back into cooking pot (off of heat).
2.Heat 2 T oil in large frying pan or wok over med-high heat. Add carrots and broccoli florets. Cook, stirring often, about 5 minutes. Add the onion and celery. Cook, stirring often, about 4 minutes. Add water chestnuts and mushrooms. Cook, stirring often, about 2 minutes. Add remaining 2 T olive oil then add cabbage and scallions. Cook, stirring often, about 5 minutes.
3.While veggies cook, in a 2-cup measuring cup, add cold water, soy sauce, corn starch and bouillon. Whisk until blended well.
4.After veggies are done add corn starch mixture. Add hot chili sesame oil and season to taste with salt and pepper. Turn heat to high and bring to a boil. Simmer until sauce thickens.
5.Pour veggie/sauce mixture over soba noodles and stir gently to combine. Enjoy!
