A hearty, nutritious soup! A hearty, nutritious soup!

    1/4 cup olive oil
    1/2 cup each, chopped: onion, celery, carrots
    3 garlic cloves, minced
    4 - 15oz cans black beans, undrained
    10oz can Rotel tomatoes & green chilies
    14.5 oz can Diced tomatoes
    1/2 tablespoon each: salt, onion powder, garlic powder
    1/2 teaspoon black pepper
    2 tablespoons fresh cilantro (use dried if you don't have fresh)


Saute onion, celery, and carrots in olive oil until soft. Add canned beans, tomato products and seasonings. Simmer together about 25 minutes or until flavors are well blended. Stir occasionally to prevent sticking.

Yields about 9-10 cups of soup

I like this soup better after it has been refrigerated overnight and heated up the next day! It's especially good with cheese and sour cream.
