Introduction

Yummy and healthful dish of fresh spinach beet greens, and mushrooms! Really good! Yummy and healthful dish of fresh spinach beet greens, and mushrooms! Really good!
Number of Servings: 2

Ingredients

    1 Cup Beet Greens, Cleaned, Rinsed and Chopped
    2 Cup Spinach, Cleaned and Rinsed
    1/2 Onion, Sliced
    3 Tsp. Garlic, Chopped or Minced
    1 Tbsp. Canola Oil
    1 Pat Butter
    1/4 Cup Water (may not need it all--for healthy sauté)
    Salt and Pepper to Taste

Directions

Heat skillet on Medium High Heat.
Add Canola oil, wait 30-45 seconds and add pat of butter.
Add onions in the skillet and let them start to brown, approx. 2-3 minutes.
Add garlic and beet greens, saute' for another 2 min.
Add spinach on top, press down if you need to.
Add water around the spinach a little at a time until you see you have enough to 'steam' it with. Add a lid to the greens, reduce heat to medium and let cook an additional 3-5 minutes, or until all the greens are tender.

Makes two heaping servings.

    Yummy, quick and easy! Although "mushrooms" appears in the title of this dish the recipe didn't say anything about them. But, I sliced up 4 large mushrooms and added them a minute or two after I started the onion and it came out great! - 6/22/09
