Number of Servings: 48

Ingredients

    2 cups grated, unpeeled zucchini squash
    3 eggs
    1 1/2 cups brown sugar
    1 cup extra light olive oil
    1 tablespoon vanilla

    3 cups whole wheat flour
    1 1/2 teaspoons baking powder
    2 teaspoons baking soda
    1 teaspoon salt
    1 tablespoon cinnamon
    1/2 cup raisins
    1 cup chopped walnuts

Directions

Mix wet ingredients in one bowl. Mix dry ingredients, raisins and nuts in a separate bowl. Mix wet and dry ingredients together and divide between two prepared loaf pans.

Bake at 350 degrees until done

Yield: 2 large loaves. Cut each loaf into 12 pieces and then in half again....yielding a total of 48 pieces of zucchini bread.
