    4 eggs
    2 potatoes, shredded (not peeled)
    1/4 cup shredded cheddar cheese
    1/4 cup 1% milk
    Chopped veggies as desired


Spray non-stick skillet with pam. Add potatoes and press into bottom of pan. Cook uncovered until bottom is golden brown and crispy., about 10 minutes.

Mix milk and eggs, add veggies. Pour over potatoes. As mixture sets, lift potatoes and tip pan to let uncooked egg get to pan to cook. Cook 5 minutes until eggs are thickened but still moist. Sprinkle with cheese.

Reduce heat to low. Cover and cook about 10 minutes or until center is set and cheese is bubbly. Loosen bottom with spatula and cut into wedges. Serves 2-4.
