Ingredients

    Chicken Thighs boneless, skinless about 3 lbs
    Chicken Brest, boneless, skinless about 6 halves
    1/4 cup of extra virgin olive oil
    6 Bell Peppers any color
    Half a yellow onion
    2 cloves of Garlic minced
    4 medium size potatoes skinned
    4 tbsp curry powder or to taste
    4 tbsp chili powder or to taste

Directions

Chop up all ingredients including chicken. Brown onion, garlic and spices in olive oil. Add chicken and brown for a few minutes then add chopped and cored peppers, tomatoes and potato and cook down until chicken is very tender and there is a nice soupy sauce from the vegtables.
