Introduction

Ingredients

    3 boneless, skinless chicken breasts
    1 large can La Victoria Green Enchilada sauce, mild
    1 can diced green chiles
    1 can fat free refried beans
    2 cups colby cheese
    2 cups fat free sour cream
    16 Mission Flour tortillas

Directions

makes 16 enchiladas

1. Place chicken breasts in slow cooker. Add diced green chiles and enchilada sauce. Cook on high 4 hours.
2. Remove chicken from slow cooker. and shred Save sauce.
3. Spray pan with non-stick cooking spray.
4. To make enchiladas: roll a scoop of beans; a tbsp of sauce, a tbsp of cheese, and a scoop of chicken in a flour tortilla. Place in pan.
5. Using remaining sauce, mix with sour cream and pour over enchiladas.
6. Bake 15-20 minutes in 375 degree oven. Sprinkle with remaining cheese and bake 5-10 minutes longer allowing cheese to melt.
