    2 Tsp canola oil
    2 medium potatoes, scrubbed, quartered and sliced
    1/2 cup 3 pepper and onion blend
    1/2 cup sliced carrot
    1 turkey Bratwurst or similar poultry sausage of choice
    2 Tbsp fresh minced rosemary
    1/4 - 1/2 tsp garlic powder or clove minced garlic
    1/4 tsp dry mustard
    1/3 tsp sea salt (about... more than 1/4, not 1/2)
    1/2 tsp fresh ground black pepper
    2 Tbsp salsa (optional - included in nutritional info) and/or Chipotle Tobasco


2 generous servings
9" skillet with lid, add canola oil. Preheat on medium-high heat while preparing potatoes. Scrub, quarter and slice potatoes, add to hot skillet. Allow to brown a little, flip and stir, cover. Peel and slice carrot, add to potato, add pepper and onion mix. Flip and mix. Cover. Slice bratwurst into rounds. Move mixture in pan to one side so brats come in contact with the pan. Cover and cook another minute or 2. Mix together spices, sprinkle over potato mix. Flip and mix. Turn brat rounds over. Cover and cook another minute. Flip and mix everything together. Cook longer if necessary. Serve as soon as the potatoes are done. Add salsa and/or Chipotle tobasco if desired.
