    1 skinless, boneless chicken breast, cut into strips
    1 stalk of Broccoli, cut into-bite-sized chunks
    1/2 onion, chopped
    1 clove garlic, chopped
    1 wedge Light Laughing Cow Cheese, or 2 T. LF Cream Cheese


Spray skillet with non-stick spray and add small amount of olive oil. Add half the onions and garlic to pan and saute lightly. Add chicken strips to pan, season with salt & pepper to taste. Saute Chicken for a few not cook all the way yet. Remove partially cooked chicken from pan and set aside. Add more oil if necessary, then add remaining onion and garlic. Saute and add the broccoli. Cover and let brocolli steam for about 2 minutes. Return the chicken and it's juices to the pan. Add the cheese at this point also so cheese melts. Cover pan and allow to cook for several minutes until chicken and broccoli are both done and cheese is melted. Mix around and serve. Makes 1-2 serving
