Introduction

Ingredients

    4 (8 oz.) pkgs. cheese-filled whole wheat tortellini
    2 (28 oz) cans organic crushed tomatoes
    1/2 cup tomato paste
    1 tsp. Extra Virgin olive oil
    1/2 cup carrots, diced
    1/2 cup mushrooms, sliced
    2 T chiffonade basil
    1/4-1/2 tsp. crushed red pepper (optional)

Directions

1. Cook tortellini according to package directions. Drain; keep warm.
2. Meanwhile, for sauce, in a medium saucepan heat the olive oil over med-high heat. Add the carrots and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook for 2 more minutes, until the mushrooms start to sweat. Next, add the crushed tomatoes and tomato paste and stir well to combine (if using crushed red pepper, add when adding the tomatoes). Bring to boiling; reduce heat. Simmer uncovered, for 2 to 3 minutes or until of desired consistency. Stir in basil; heat through. Spoon sauce over tortellini.
