Ingredients

    3 ripe bananas
    2 tablespoons olive oil
    2 cups flour
    3/4 cup sugar
    1 teaspoon salt
    1 teaspoon baking soda
    1 tablespoon honey
    1/2 cup coarsely chopped walnuts

Directions

Preheat the oven to 350 degrees. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts. Pour the well blended batter into the greased pan and bake for one hour. Remove and let cool.

I found this recipe works better than many I've tried since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice howe'ver olive oil is the healthiest!

    Very Good
    Most vegans don't consider honey a vegan food. Agave nectar is a great replacement. Otherwise great recipe! - 3/29/09

    good recipe. I have one simmilar
    omit oil
    use 1/2 cup sugar
    use 1 cup applesuace instead of oil and eggs(in normal nana bread)
    My family does not like walnuts so I use 1/4 cup of dark choco chips.

    Incredible!
    In the oven now and I can't wait to try it (the batter was super yummy)! I can't have walnuts so I used pecans :) Easy to make, but where does the honey come in? thanks! - 3/16/09
