    1 1/2 cups all-purpose flour
    3/4 cup sugar
    1/2 tsp. salt
    2 tsp. baking powder
    1/3 cup unsweetened applesauce
    1 egg
    1/2 cup skim milk
    2 TBSP. orange juice
    zest of one orange
    1/2 cup dried, sweetened cranberries


Makes 12 regular size muffins.

Preheat oven to 400 degrees. Spray muffin tin with non-stick spray.

Combine flour, sugar, salt & baking powder in a mixing bowl. In a separate bowl, mix together applesauce, egg, milk, orange juice and orange zest. Combine with dry ingredients and mix well. Add cranberries. Fill muffin cups 1/2 full.
Bake @ 400 degrees for 20-23 minutes.
