Number of Servings: 12


    1 1/2 cups whole wheat flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/8 teaspoon allspice
    1/8 teaspoon ginger

    1/3 cup honey
    1 egg
    1/2 cup whole milk (minus 1T, so you can add 1T lemon juice or vinegar to make buttermilk)
    1/3 cup extra light olive oil
    1/2 teaspoon vanilla
    1 1/2 cups grated carrot
    1/2 cup raisins
    1/2 cup chopped walnuts


Measure dry ingredients into large bowl. Mix wet ingredients in another bowl with carrots, raisins and nuts. Add wet ingredients to dry ingredients and stir until well blended.

Divide among 12 muffin cups that have been sprayed with cooking spray.

Bake at 400 degrees for about 20 minutes or until done.

Yields 12 muffins
