    2 Blocks of EXtra firm Tofu, cubed
    .25 cup low sodium soy sauce
    4 Tbsp olive oil
    2 tsp ground ginger
    2 tsp granulated garlic
    .25 cup Nutritional Yeast


cube Tofu in about 1" cubes, marinate overnight in Soy Sauce, oil, ginger and garlic.
place on glass baking dish, so sides are not touching, roast at 425 degrees for about 30 minutes, turn at least once during this time.
once crispy and brown, remove from dish, sprinkle with nutritional yeast, season to taste.
i use some seeweed flakes, and a few sesame seeds.
another option is to marinate with out the oil, and then pan fry in the oil until golden brown and crispy, but then you have to keep turning it and be at the stove the whole time, it takes about 20 minutes on Medium heat.
