Number of Servings: 34


    1/3 c granulated sugar
    ¾ c Splenda
    1 cup Applesauce
    3 eggs (1 egg, 2 egg beaters)
    1 ¾ cups Whole wheat flour
    ¼ c. Wheat germ
    3 teaspoons ground cinnamon
    ½ tsp cloves
    ½ tsp nutmeg
    ¼ tsp ginger
    1 ½ teaspoon baking soda
    1 teaspoon vanilla
    1/2 teaspoon salt
    4 cups shredded carrots (5 medium)
    1 cup coarsely chopped nuts
    1 cup raisins


Mix all dry ingredients. Add raisins & nuts, toss to coat. Add remaining ingredients.

Fill muffin cups 3/4 full. Bake at 350 for 30-35 min.
