    1 large bunch of Kale, roughly chopped
    1/2 onion, chopped
    3 cloves of garlic, chopped
    1/2 tbsp extra virgin olive oil
    1 cup Vegetable Broth (Chicken Broth can be substituted)
    1 tsp crushed red pepper


Add extra virgin olive oil to hot pan. Add onions and cook until transparent, then add garlic and cook for 1 minute. Add vegetable broth, kale and crushed red pepper, gently turn (stir). Cover and cook for about 15 minutes, or until kale is dark green and soft (like canned spinach), stirring occasionally.
