Introduction

This is a variation on regular tuna salad, except with peas and carrots. Reminds me of Forrest Gump. High in protein. Serve with crackers or in a sandwich. Ingredients

    1 can of tuna in water
    1 tbsp regular mayo (or light if you want)
    1/2 can of peas
    1/2 cup of matchstick carrots (or however you prefer; grated, etc.)
    1/2 cup of celery, chopped
    1 hard boiled egg, diced
    Handful of cilantro for flavor
    Salt and pepper to taste

Directions

Drain canned tuna and dump in a bowl, add a scoop of mayo and dashes of salt and pepper. Add peas, carrots, celery, hard-boiled egg, and cilantro. Omit egg to lower cholesterol. I also sometimes add freshly diced jalapeno for spice and extra vitamins. Stir well or until ingredients are combined. Serves 2 or 3 on a sandwich or with crackers.
