Introduction

Ingredients

    2 eggs, beaten
    1 tsp Kikkoman Lite Soy Sauce
    1 tsp dark sesame oil
    1 clove garlic, minced
    1 Tbsp canola oil
    3/4 cup sliced mushrooms
    3 cups cooked brown rice, cold
    1 medium carrot, shredded
    1/2 cup frozen green peas, thawed
    2 Tbsp Kikkoman Lite Soy Sauce
    3 scallions, sliced

Directions

In a small bowl, combine eggs and 1 TSP soy sauce; set aside.

Pour 1 TSP sesame oil into a wok or large skillet. Heat over medium high heat, add garlic and egg mixture, stir gently to scramble. When set, remove from heat and cut up large pieces. Remove pan from heat.

Pour 1 TBSP canola into skillet and return to medium high heat. Stir fry mushrooms for 2 minutes.

Add rice, carrots and peas. Sprinkle with TBSP soy sauce. Cook and stir until heated through.
Add egg mixture and green onions, cook until heated through.

MAKES 8 SIDE SERVINGS
