Number of Servings: 4

Ingredients

    1 sweet potato chopped
    1 cup baby carrots
    1/2 large onion chopped
    2 cloves garlic minced
    1/2 cup apple juice
    2 tbsp red wine vinegar
    2 tbsp light brown sugar
    2 tbsp black currant jam / jelly
    2 tbsp reduced sodium soy sauce
    1 tsp dijon mustard
    salt and black pepper to taste
    1-2 lb pork roast or chops (can use pork loin, but don't cook too long or it will be too dry).

Directions

Arrange potatoes, onion, and carrots in bottom of the slow cooker. Place pork on top. Cover pork in minced garlic and any other spices you desire.

In a medium bowl, whisk together the black currant jam, apple juice, vinegar, soy sauce, mustard, salt and pepper. Pour over pork. If you use a particularly large roast, add a half a cup of water or chicken stock.

Cover and let cook on low 6-8 hours or high 3-4 hours. Enjoy.
